  This is a great cookbook. There is a great selection of recipes that are easy to follow. There is something for everyone in this book and I will be putting to great use. I would recommend.

  Excellent recipe for red curry paste that makes the most amazing Cambodian Fish Curry as judged by multiple foodie friends :) so good I made it twice in the same week once with fish and once with tofu. however I cooked it in a Dutch over not in an instant pot- still cooks fairly quick especially if you pre-made the curry paste (it keeps in the freezer) and makes the house smell absolutely amazing. Pro tip, I whip the canned coconut milk for a few seconds in a nutriblet blender just to homogenize it before adding which gets the texture of the final curry silky smooth. I cannot wait to try the other recipes in this book.

  I bought an Instant Pot for Christmas along with 3 Instant Pot cookbooks and this one was the hands down winner! Last Christmas, I started cooking more gluten-free recipes and it relieved a lot of chronic pain. Well, this cookbook arrived yesterday and I already made two recipes out of it including the peaches and cream steel cut oatmeal which was a breakfast game changer! This cookbook has so many recipes that I can't wait to make and the instructions are easy to follow and the breakdown of the cook time includes the time needed to come up to pressure and the natural release time so you have a true idea of how long it will take to make the meal. I liked the cookbook so much I just ordered it for my son and daughter-in-law for whom also received an Instant Pot for Christmas. Highly recommend this cookbook!
