Christmas is a popular holiday in Denmark. Many aspects of the Danish Christmas are similar to other nations' celebrations and particularly those of other northern European nations. Denmark has Santa Claus in the guise of Julemanden - The Christmas Man and Christmas trees. The main Christmas dinner and gift giving is on Christmas Eve - December 24th. Denmark's Nordic cold climate, love of cosiness and stylish Scandinavian design creates a traditional festive atmosphere. Denmark has some special traditions and Christmas foods of its own. For example Christmas Lunches are held by friends, families, schools and clubs where food and drink is consumed all day. Danish Christmas food consists of hearty dishes such as roast duck, crispy roast pork, numerous pickled herring dishes, fried sausages and meatballs, vegetable dishes such as potatoes with sugar and many wonderful cookies and desserts. Find out more about Danish Christmas food and traditions in this book.

  • - A Cookbook That Tells All!
    by Ivy Hope

Cottage cheese is one of these cheeses you either love or you do not. I think often there is no middle and you may need to run some tests with your loved ones before you start preparing some outrageous meals with this lovely cheese. However, I think like any other food, of course, it is all about how you serve it. You must find ways and ingredients to match it with pleasing your family members. It can certainly be an enquired taste. For my part, when I was young, I could not stand cottage cheese. However, as the years passed by, I was looking for a low-fat cheese to add to my salads and then I discovered the smooth and milky taste of cottage cheese. This cookbook is full of very diversified recipes including cottage cheese. We want you to know that this often misunderstood and underused cheese is very versatile. One thing to keep in mind is that it is not the best cheese to use if you are hoping to melt it. It will become rather liquid and may change greatly the consistency of your dish. But it is a great cheese to use to help ingredients blend or stick together, for example, cakes (that's right cakes!), patties, or even meatballs. Of course, cottage cheese is also eaten very often with fruits, with salads, or even in some sandwiches. Let us start this adventure and experience together this lumpy and yummy cheese, shall we?

Those podcasts inspired this book?a celebration of the legacy and enduring importance of Bethlehem, one of the most storied cities in the world.

    £19.99

"Cooking begins with the senses, and nobody knows this better than Bilal Bhatti. Before he became @GoldenGully, Bilal grew up learning to cook by paying close attention to his mother in the kitchen. He quickly realized that in order to cook like her, he'd need to rely on his senses instead of traditional measuring tools. She'd call for a "saucer" of flour when making roti and a "mug" of rice when making biryani, using typical household items as a standard for measurement rather than cups and teaspoons. On the surface, Beyond Measure is a book about Pakistani cuisine. But at its heart, this book is for anyone who wants to learn to cook intuitively. This book will encourage you to learn flavor and ingredient profiles, learn basic (and some not so basic) cooking techniques, and then make the dishes your own. Like his mother and grandmother, Bilal encourages his followers not to be afraid of "failure" in the kitchen, as the commitment to persistence is core to immigrant home cooking. Whether you're looking to create the perfect blend of spices for your chai or to master making roti dough by feel, cooking requires a lot of trial and error. Take your time and enjoy the process"--

This is a love story between sugar and spice.Spice is often the party girl, the loud, bold, exuberant element in the mix. A generous swirl of woody-sweet cinnamon elevates a simple bun, pistachio green baklava is made otherworldly with the headiness of rosewater and a truly fiery gingerbread is thunder and wonder in the mouth. There is also another art, more subtle yet equally seductive. Married with sugar, spice can provide a delicate fragrance, hard to put your finger on but one that gives backbone to a dish. It can balance tartness and bring sweetness so you can tone down the sugar. Flavours can be enhanced by a thoughtful addition from the spice cupboard, making chocolate more chocolatey and fruit taste more of itself. Added not in shouts, but in whispers, an intrigue of spice deepens allure. In this book, we'll explore how to unlock flavours, and how to marry them to make much more than the sum of their parts.Floral and fruity spices pair well with rich fats. Warming spices like ginger and clove play off treacly brown sugar. Anise sweetens, lemony coriander seed brightens and herbaceous notes pick out complexity in chocolate. A suspicion of nutmeg cuts the sweet creaminess of custard for a more rounded tart, and a whisper of cardamom makes inky poached plums jaunty and interesting. The chapters are divided by flavour to guide you towards a dessert or bake that is bright and zippy, floral and fragrant, or dark and spicy. Recipes include spice switches so, as you develop a nose for the flavours, you can be creative and playful with your combinations.

"Like butter in French cooking or olive oil in Italian, jangs are the soul of Korean cuisine. These umami sauces are found in every meal, from soups and stews, to salads, marinades, and even desserts, adding depth and complexity to every dish. The foundation of the three main jangs- gochujang, doenjang, and ganjang-is simple. Soybeans, water, and salt are dried, aged, and fermented in earthenware pots, extracting flavor from their environment and slowly blossoming into intensely flavored jangs. Few understand these ingredients better than chef Mingoo Kang, who has dedicated his Seoul restaurant to the exploration of jangs. In his first cookbook, Kang expertly weaves jangs' history and methods into 60 accessible recipes to bring the sauces to life. Dishes like Fish Dumplings and Gang-Doenjang Bibimbap showcase the sauces' traditional Korean roots, while Western-inspired recipes like Doenjang Cráeme Brulee and Ssamjang Cacio e Pepe reinvent favorite meals. Through artisan profiles, sidebars, and step-by-step photographs, Jang uncovers one the culinary world's best-hidden secrets"--

Food and drink trends
We have seen a lot of cooking trends in recent years, especially when it comes to sustainability. At Tales you find many cookbooks concerning precisely that. It is actually quite easy to cook sustainably, if you remember these three pieces of advice. 1. always remember to buy locally produced fruit and vegetables so that you reduce transportation that normally leaves a huge climate footprint. 2. use the ingredients that match the season. By doing that you reduce the use of greenhouse farming that also uses a lot of energy. 3. and maybe most importantly; try to lessen your food waste by finding new ways of combining your left-overs. By reducing food waste you also save a lot of money in addition to saving the environment for a lot of wasted energy and unnecessary consumption. If you need creative ideas and new recipes to help you fight food waste, we would recommend you to dive into the cookbook Solo Cooking for a Sustainable Planet
Another trend is food that is easy and fast to cook. In our busy everyday many haven’t got the time to cook, and that makes many choose the easy way by ordering something from the local fastfood restaurant. A choice with little variation and typically not all that healthy. Something Jamie Oliver tries to root out. Jamie Oliver is one of the most popular chiefs in modern time. He has found a way of getting the most tasty meals out of a few good ingredients. Try to dive into his cookery book 5 ingredients - quick & fastfood for easy and cheap recipes for the everyday. Oliver gives his take on healthy dishes that are as fast to make as ordering from your local fastfood restaurant. Jamie Oliver’s collection of easy recipes is also a good cookbook for beginners.
Fermentation has also gone extremely popular in recent years. The cooking technique might just be the direct opposite of Jamie Oliver’s easy and fast recipes, but many people have started to ferment onions, beetroots, pumpkins and cucumbers at home. You can ferment almost everything, the only limit is your imagination. To ferment is also very sustainable, because it increases the durability of the products you choose to ferment. Read the cookery book The Art of Fermentation to get a guide on how to get started on fermentation.

Vegan cookery book
Another way of making your cooking more sustainable is also by going vegan - maybe just a day or two every week saves the environment for a lot of CO2. That is why Tales’ collection of food and drink also contains many vegan cookery books. A good vegan cookery book contains delicious and innovative recipes without meat, and it also contains inspiring stories about the vegan life and the challenges it comes with.
At Tales you find the vegan cookery book Vegan 100 by Gaz Oakley. Oakley gives you a guide with all you need to know, when you go vegan. A book he missed, when he himself went vegan. The vegan cookery book contains no less than 100 green and tasty recipes that makes you forget all about meat. If you want inspiration for your next vegan cookery book take a look at our category Vegetarian cookery that both contains vegan and vegetarian recipes.

Cookbook for kids
If you want to teach your kids how to cook. You can also find your next cookbook for kids in Tales’ selection. A good cookbook for kids is essential in raising your child, so they can be curious on food and experiment with different recipes. Kids that have cooked in their childhood grow up to be quality-conscious amateur and even professional cooks.
You can for example let your child discover recipes inspired by the magical world of Harry Potter. In the cookery book Unofficial Harry Potter Cookbook - from Mugglers to Magic Gina M. Meyers gives her guide to enchanting meals from the fascinating Harry Potter Universe. Let your child take on a magical journey while making their first meal. The enchanting narrative in the cookbook for kids makes your child more curious about cooking and tasting new ingredients. Cooking becomes a form of play.
